Jack-O’-Lantern Energy Bites

Fall brings us all things pumpkin spice and of course halloween candy!  Here is a clean tasty snack that may help you from crushing all the mini chocolate bars!

These energy bites are the perfect balance of satisfying protein, with fall flavors that taste amazing.  You can swap out peanut butter for almond butter, cashew butter, or even sunflower seed butter (to make it nut-free).

You can make them as basic bites or you can make this a fun activity with littles and use mini chocolate chips and pretzels to transform these treats into mini jack-o’-lanterns.

Ingredients

¾ cup all-natural smooth peanut butter

¼ cup pure pumpkin puree 

¼ cup honey

¾ cup dry rolled oats

2 scoops vanilla shakeology

½ tsp. ground cinnamon (swap out for pumpkin spice)

2 Tbsp. mini chocolate chips12 small pretzel sticks, each broken into 2 pieces

Combine peanut butter, pumpkin, honey, oats, shakeology, and cinnamon in a medium bowl; mix well with clean hands or a rubber spatula.  (layering helps)    

  1. Shape mixture into 15-24 mini balls.
  2. Arrange chocolate chips in protein balls to resemble jack-o’-lantern faces. Stick a pretzel piece into the top of each protein ball to make a stem.
  3. Flash freeze on a cookie tray, and then put in airtight container.  These can be kept in the freezer and ready to eat within 10minutes of pulling out.
  4. You can also add various things like hemp hearts, chia seeds, cocount flakes, depending if you want to add more superfoods.  (if your not an “all things pumpkin person,” these bites are equally delicious without the pumpkin in them)
